Chicken in Red Oil Sauce(low-oil style)

Prepare(1-2 servings):

  ½ chilled chicken or 2 chicken thighs 
 Ginger                     1–2 slices
 Spring onion           to taste
 Salt                          5g
 Cucumber              (as desired)

Sauce:

 Yumyumia hot chili oil   10g
 Soy sauce                       20g
 Black vinegar                  10g
 Minced garlic                  15g
 Sugar                              15g
 Sesame oil               a few drops
 Coriander                   to taste 

Steps:

1.Chicken thaw completely, then soak in salted water (enough to submerge) for 30 minutes to remove any frozen taste. 
 
2.Bring a pot of water (enough to cover the chicken) to a boil with ginger, spring onion, and salt. Once boiling, add the chicken. When it boils again, reduce heat to lowest and simmer for 20–30 minutes (adjust based on size). 

3.Wash, smash/cut cucumber into chunks, sprinkle with salt, mix, and set aside. 

4. Chicken after cooking, plunge it into ice water to cool completely. 

5.Drain cucumber and place on a serving dish. Slice the cooled chicken and arrange over the cucumber. 

6.Mix all sauce ingredients and drizzle over the chicken. 

7.Top with coriander
